Hohmann => Bowes-Nardiello recipes

Hi Everyone!
Here are some family recipes for you!

Egg casserole
From Adele Bowes
We have been enjoying this every Christmas morning for the last 25 plus
years.

2 cups croutons ( the salad type//we like the cheddar cheese ones)
4 oz. shredded cheddar
4 eggs, slightly beaten
2 cups milk
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp onion powder
dash pepper
4 well cooked bacon strips

Combine croutons and cheddar. Put into a 6X10" buttered glass oven dish.
Combine the rest on the ingredients and mix well.
Pour over the croutons. Crumble bacon and sprinkle over top.
Cover with foil and refridge overnight.
Next mmorning bake @ 325 for 55-60 minutes uncovered.


Lillian Hohmann's Cracker Balls
( for soup )
1 egg, slightly beaten
2 Tbsp butter melted
1 Tbsp milk
1/4 tsp salt
1/2 cups cracker crumbs ( Ritz or Saltines work well)
dash of nutmeg

Combine egg and butter.
Add remaining ingredients & mix well.
Shape into tiny balls ( about 12 ) and let stand about 15 minutes to
expand and firm up..
Drop into boiling soup for 15 minutes before serving.


Babette's Favorite Salmon
1 Tbsp dark brown sugar
1 tsp Kosher salt
1 tsp garlic powder
1 tsp. ground ginger
1 tsp corriander
1 tsp coarsley ground black pepper
1/4 to 1/2 tsp. ground allspice
1.5 pound center cut salmon
1/2 tsp olive oil
cooking spray

Combine first 7 ingredients. Place salmon fillet on work surface, brush
evenly with oil. Sprinkle spice mixture evenly over salmon; gently rub
mixture into fish. Cover lighly with plastic wrap, and chill 15 minutes.
Place fish on "Forman" grill and cook about 10 to 15 minutes.....if
using outdoor grill use a fish grilling rack sprayed with oil to prevent
sticking and ease in turning.

Baked Spaghetti Pie

Prep 30 minutes

Bake 25 minutes

Makes 6 main dish servings


½ pound spaghetti

2 large eggs

1 container (15 oz.) part-skim ricotta cheese

¾ c. plus 2 Tbsp. grated Parmesan cheese

1-cup marinara sauce

½ cup shredded mozzarella cheese


1. Cook spaghetti according to package directions; drain.
2. Preheat oven to 350’
3. Grease 9-inch glass pie plate
4. In a large bowl, with fork, beat eggs.
5. Stir in ricotta, ¾ cup of Parmesan, and marinara sauce until blended.
6. Add spaghetti to ricotta mixture and stir until well coated.
7. Transfer spaghetti mixture to prepared pie plate.
8. Sprinkle with mozzarella and remaining 2 Tbsp. Parmesan.
9. Bake pie 25 minutes
10. Remove and let stand 10 minutes for easier serving.
11. Cut into wedges and serve.

Upside Down Apple French Toast

presented by The Manor Bed and Breakfast               
1/2 cup (1 stick) butter
1 1/4 cups packed brown sugar
1 tablespoon water
3 Granny Smith apples, peeled, cored and sliced
Cinnamon to taste
1/2 cup raisins, optional
1 loaf French bread, sliced 1 1/2 inches thick
1 1/2 cups milk
6 eggs
1 teaspoon vanilla
Nutmeg to taste
1/2 cup whipping cream
1/2 cup sour cream
1/4 cup sugar
1/2 teaspoon almond extract

Coat a 13x9 inch baking dish with nonstick cooking spray. Combine butter, brown sugar and water in a saucepan over medium heat. Cook, stirring, until just bubbling. Pour into baking dish. Allow to cool for 20 - 30 minutes. Place apple slices in rows, close together (or overlapping), on top of mixture in pan. Sprinkle with cinnamon and raisins. Place bread on top of the apples. Mix milk, eggs and vanilla. Pour over bread. Sprinkle with nutmeg. Cover and refrigerate for 3 hours, or overnight.

Preheat oven to 350 degrees F. Bake French toast for 60 minutes, or until golden brown and crispy. Just before the French toast is done baking, whip the whipping cream sour cream, white sugar and almond extract together on high until thickened. Serve the French toast upside-down. Spoon the sauce in the dish over the French toast. Place 2 tablespoons of whipped cream atop each serving and garnish with almonds.


Little Cheddar Meatloaves

Preheat 350 degrees
Bake 45 minutes
Serves 8
1 egg
¾ C. Milk
1 C. Shredded cheddar cheese
½ C. Oats
½ C. Chopped onion
1 tsp. Salt
1 lb. Ground beef or turkey
Sauce
2/3 C. Ketchup
½ C. Brown sugar
¼ - ½ C. Molasses
1-1/2 Tbsp. Mustard


1. In a bowl, beat egg and milk.
2. Stir in cheese, oats, onion and salt.
3. Add beef and mix well.
4. Shape meat mix into 8 small loaves.
5. Place loaves into greased 13X9X2 baking dish.
6. Combine ketchup, brown sugar, molasses and mustard.
7. Spoon sauce over loaves.
8. Bake uncovered at 350 for 45 minutes.
9. Enjoy!

Aunt Virginia's Biscotti

Preheat 325 degrees
Bake 25 minutes
Serves many
½ C. Unsalted Butter
¾ C. Sugar
2 Eggs
1 Tbsp. Anise Seeds
1 Tbsp. Anise or Almond Extract
2 C. Flour
1 ½ tsp. Baking Powder
A Pinch of Salt
2/3 C. Toasted & Sliced Almonds


1. Cream butter and sugar.
2. Add eggs one at a time.
3. Add flavorings.
4. Add dry ingredients.
5. Fold in almonds.
6. Prepare cookie sheet lined with parchment paper.
7. Divide dough into two equal parts and shape into two 12-inch logs.
8. Place logs onto cookie tray and bake for 25 minutes or until lightly
browned.
9. Let cool for 10 minutes.
10. Slice logs into ½-inch pieces and return to cookie tray on their
side. Cook 20 minutes.
11. Turn cookies over and cook again for 20 minutes.
12. Let cool completely and then store in an airtight container.

Turkey Enchilada Casserole

1 can (16 oz) tomato sauce
1 can (4 oz) chopped mild green chilies drained
1 garlic clove, crushed
1 T chili powder
2 t ground cumin
1 t dried oregano
1/4 t ground black pepper
8 oz cooked turkey, unsliced
1 bunch green onions
9 corn tortillas, cut in half
2 1/2 cups grated cheddar cheese

Preheat oven to 375
Combine first 7 ingredients
Cube turkey.
Cut green onions into thin slices


Line bottom with 6 tortillas halves
Spread 1/3 sauce cover with 1/2 turkey 1/2 onions and 1 c cheese
Top with 6  tortillas, 1/2 remaining sauce, all turkey and green onions and one more c of cheese
Top with remaining tortillas, sauce and 1/2 c cheese

Bake 25 minutes
Let stand 5 minutes
