Hohmann => Bowes-Nardiello recipes

Hi Everyone!
Here are some family recipes for you!

Egg casserole
From Adele Bowes
We have been enjoying this every Christmas morning for the last 25 plus
years.

2 cups croutons ( the salad type//we like the cheddar cheese ones)
4 oz. shredded cheddar
4 eggs, slightly beaten
2 cups milk
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp onion powder
dash pepper
4 well cooked bacon strips

Combine croutons and cheddar. Put into a 6X10" buttered glass oven dish.
Combine the rest on the ingredients and mix well.
Pour over the croutons. Crumble bacon and sprinkle over top.
Cover with foil and refridge overnight.
Next mmorning bake @ 325 for 55-60 minutes uncovered.


Lillian Hohmann's Cracker Balls
( for soup )
1 egg, slightly beaten
2 Tbsp butter melted
1 Tbsp milk
1/4 tsp salt
1/2 cups cracker crumbs ( Ritz or Saltines work well)
dash of nutmeg

Combine egg and butter.
Add remaining ingredients & mix well.
Shape into tiny balls ( about 12 ) and let stand about 15 minutes to
expand and firm up..
Drop into boiling soup for 15 minutes before serving.


Babette's Favorite Salmon
1 Tbsp dark brown sugar
1 tsp Kosher salt
1 tsp garlic powder
1 tsp. ground ginger
1 tsp corriander
1 tsp coarsley ground black pepper
1/4 to 1/2 tsp. ground allspice
1.5 pound center cut salmon
1/2 tsp olive oil
cooking spray

Combine first 7 ingredients. Place salmon fillet on work surface, brush
evenly with oil. Sprinkle spice mixture evenly over salmon; gently rub
mixture into fish. Cover lighly with plastic wrap, and chill 15 minutes.
Place fish on "Forman" grill and cook about 10 to 15 minutes.....if
using outdoor grill use a fish grilling rack sprayed with oil to prevent
sticking and ease in turning.
