Aunt Virginia's Biscotti

Preheat 325 degrees
Bake 25 minutes
Serves many
½ C. Unsalted Butter
¾ C. Sugar
2 Eggs
1 Tbsp. Anise Seeds
1 Tbsp. Anise or Almond Extract
2 C. Flour
1 ½ tsp. Baking Powder
A Pinch of Salt
2/3 C. Toasted & Sliced Almonds


1. Cream butter and sugar.
2. Add eggs one at a time.
3. Add flavorings.
4. Add dry ingredients.
5. Fold in almonds.
6. Prepare cookie sheet lined with parchment paper.
7. Divide dough into two equal parts and shape into two 12-inch logs.
8. Place logs onto cookie tray and bake for 25 minutes or until lightly
browned.
9. Let cool for 10 minutes.
10. Slice logs into ½-inch pieces and return to cookie tray on their
side. Cook 20 minutes.
11. Turn cookies over and cook again for 20 minutes.
12. Let cool completely and then store in an airtight container.
